While in PHX on a few hour layover between flights, I found a handful of places that offer Gluten Free items. It's only 9am so I wanted something hearty for breakfast, since I woke up at 4am in Los Angeles. I went on PHX Airport website to view Food options and they actually have a section for Gluten Free and Vegan! I decided to go to a Mexican placed called Sir Veza's located in Terminal 4 near Gate C 12. They have breakfast served till 11am and all of their options include choices of Taco, Burrito or Bowl style. I decided to go with the breakfast bowl and it was tasty.
They also offer a taco salad and nachos and a bar for some day drinking :)

Andale Mexican Restaurant @ SFO airport
SFO is my home base airport and Mexican food is my favorite thing to eat! Andale is a healthy choice to have breakfast, lunch or dinner. They specialize in organic California grown ingredients. I've had the veggie nachos and huevos rancheros (served with potatoes and fresh fruit). Each are around $10.00 and large portions. Please be aware that their meats are cooked in soy sauce and the rice is cooked in chicken broth (for all you vegetarians)!!! I've also ordered just a side of beans and corn tortillas for a lighter, smaller portion meal which costs around $4.00 total. The salsa bar has lots of flavourful choices. They also have a location at the Oakland, CA airport.

NAPIZZA- San Diego, CA (1702 India Street, San Diego, CA ). This organic pizza restaurant offers pizza by the slice and has two GF options daily (at least 1 is vegetarian). The crust is very thin and crispy. I ordered a slice of the sausage and broccoli and it was delicious. Size of slice was about 4 1/2 inches square for $4.00. They offer custom salads and whole pies as well. There is seating at their lovely sidewalk patio area. They have various beers and sanrgia and are interested in carrying GF beer options in the future. They do offer to deliver within 1.5 miles of their location. Can't wait to go back!
